Crab-stuffed Shrimp With Red Bean Relish Recipe

Ingredients
  • 2 tb sliced Fresh Cilantro
  • 1 ts Dijon Mustard
  • 1 tb Balsamic Vinegar
  • 6 oz Lump Crabmeat
  • 1 ts Dried Oregano
  • Cilantro; Optional
  • 1/3 c Red Bell Pepper; sliced
  • 1 c Mango; Peeled & sliced
  • 15 oz Fat-Free Ricotta Cheese
  • 14 oz Artichoke Hearts; Quartered
  • 3 tb Grated Fresh Parmesan Cheese; Divided
  • 4 Poblano Peppers; Halved And Seeded
  • 1/8 ts Pepper

Directions
  • Step #1 mix first 4 ingredients in a small bowl; stir well.
  • Step #2 Cover and chill.
  • Step #3 preheat your trusty oven to 350?.
  • Step #4 mix 2 tbsps cheese, pepper, oregano, mustard, & Ricotta cheese in a food processor/blender, & process until smooth.
  • Step #5 Spoon into a bowl, & stir in the artichokes & crabmeat.
  • Step #6 divide mixture evenly among the chile halves, & Sprinkle top with 1 tbsp cheese.
  • Step #7 Place stuffed chilies on a baking sheet, & bake at 350? for 30 mins or until lightly browned.
  • Step #8 Server chiles with mango salsa, & garnish with cilantro sprigs, if desired.
