Step #1 FOR FROSTING--- 1/4 c Cream cheese; softened (2 -oz) 1 tb Unsalted butter; softened 2 ts Pure maple syrup or honey preheat your trusty oven to 350 degrees & line 6 1/2c muffin tins with paper liners.
Step #2 In a small heatproof bowl cover cranberries with boiling water and soak 5 mins.
Step #3 While cranberries are soaking, cinnamon, cornstarch, baking powder, nutmeg, into a bowl sift together flour, & a pinch salt.
Step #4 In another bowl with an electric mixer beat together butter & sugar until light & fluffy & beat in egg, 1 tbsp at a time, beating well after each addition.
Step #5 Beat in vanilla.
Step #6 stir in the flour mixture & milk alternately in several batches, beginning & ending with flour & stirring until smooth after each addition.
Step #7 Drain cranberries & pat dry.
Step #8 Chop cranberries fine & stir in theto batter.
Step #9 Divide batter among muffin tins & bake in middle of oven until a tester comes out clean, about 20 mins.
Step #10 Making frosting while ccakes are baking: In a bowl beat together frosting ingredients until smooth & chill.
