Cranberry Muffins Recipe

Ingredients
  • 3/4 c Granulated sugar
  • 1 c Ginger ale
  • 1 c Water
  • 2 c Fresh or frozen cranberries
  • 2 Envelopes unflavored gelatin
  • 2 c Cranberry cocktail juice
  • 1 tb Grated orange rind

Directions
  • Step #1 In heavy saucepan, mix cranberries, cranberry cocktail juice and 1/2 c of the water; bring to a boil.
  • Step #2 Reduce heat & let simmer for 5 to 7 mins or until cranberries pop & soften.
  • Step #3 Meanwhile, Sprinkle top gelatin into remaining water; let this stand for 1 min to soften.
  • Step #4 Add to cranberry mixture along with sugar and orange rind; stir until gelatin & sugar have dissolved, about 1 min.
  • Step #5 remove this from heat.
  • Step #6 stir in the ginger ale.
  • Step #7 Chill, stirring every once in awhile, until slightly thickened and consistency of raw egg whites.
  • Step #8 pour this into rinsed but not dried 6 c mould; put in the fridge for about 4 hrs or until set, or overnight.
  • Step #9 To serve, unmould onto serving plate.
  • Step #10 Makes about 12 servings.
