Cranberry Upside-down Muffins Recipe

Ingredients
  • 1/2 c Butter - ; softened
  • 3/4 c Light brown sugar;
  • 1 ts Baking soda
  • 1 2/3 c All-purpose flour
  • 1/2 c Pecans; coarsely sliced
  • & coarsely sliced
  • 1 c Fresh cranberries; rinsed, patted dry,
  • 1 Egg
  • 1 ts Grated orange zest;
  • 1 1/2 c White chocolate chips
  • 1/2 ts Salt

Directions
  • Step #1 preheat your trusty oven to 375 degrees.
  • Step #2 Grease 2 large cookie sheets.
  • Step #3 In small bowl, mix flour, baking soda & salt; set aside.
  • Step #4 In large mixer bowl, beat butter & brown sugar until creamy.
  • Step #5 mix in egg.
  • Step #6 slowly beat in flour mixture.
  • Step #7 stir in the white chocolate, cranberries, pecans & zest.
  • Step #8 Drop by heaping tspfuls onto prepared cookie sheets.
  • Step #9 Bake 12 to 14 mins or until golden brown.
  • Step #10 Watch carefully -- cookies burn easily.
  • Step #11 remove this from oven; let this stand 2 mins.
  • Step #12 (Cookies will be underbaked when removed from oven, but continue to bake during standing time.
  • Step #13 ) remove this from cookie sheets; let cool.
  • Step #14 Store loosely covered or freeze.
  • Step #15 Yields about 3 dozen cookies.
  • Step #16 Tester's note: This cookie was very tricky to bake.
  • Step #17 Pay attention the entire time the cookies are in the oven.
  • Step #18 It's not a recipe to make if you're in a hurry or doing several things at once.
