Step #1 In a large stainless steel or enamel saucepan mix cranberries, vinegar, & champagne.
Step #2 Bring to boiling; reduce heat.
Step #3 Simmer carefully, uncovered, for 3 mins.
Step #4 remove this from heat; cool.
Step #5 Pour mixture into a clean 3 qt jar.
Step #6 Cover jar tightly with a nonmetallic lid (or cover with plastic wrap & then tightly seal with a metal lid).
Step #7 let this stand in a cool, dark place for 2 weeks.
Step #8 Strain vinegar; discard cranberries.
Step #9 Transfer strained vinegar to decorative bottles.
Step #10 If desired, add a few extra cranberries to each bottle.
Step #11 Store vinegar in a cool, dark place for up to 6 months.
