Cranberry Walnut Tartlets Recipe

Ingredients
  • Fresh Cranberries; Optional
  • 3 1/4 c Champagne; 750 Ml Bottle
  • 12 oz Fresh Cranberries
  • 3 c White Wine Vinegar

Directions
  • Step #1 In a large stainless steel or enamel saucepan mix cranberries, vinegar, & champagne.
  • Step #2 Bring to boiling; reduce heat.
  • Step #3 Simmer carefully, uncovered, for 3 mins.
  • Step #4 remove this from heat; cool.
  • Step #5 Pour mixture into a clean 3 qt jar.
  • Step #6 Cover jar tightly with a nonmetallic lid (or cover with plastic wrap & then tightly seal with a metal lid).
  • Step #7 let this stand in a cool, dark place for 2 weeks.
  • Step #8 Strain vinegar; discard cranberries.
  • Step #9 Transfer strained vinegar to decorative bottles.
  • Step #10 If desired, add a few extra cranberries to each bottle.
  • Step #11 Store vinegar in a cool, dark place for up to 6 months.
  • Step #12 Makes about 6 c Per serving: 920 Calories; 1g Fat (1% calories from fat); 1g Protein; 109g Carbohydrate; 0mg Cholesterol; 11mg Sodium Food Exchanges: 2 1/2 Fruit; 3 Other Carbohydrates NOTES : A slightly sweet vinegar; best suited in salad dressings for green or fruit salads.
