Cranberry Winter Pudding Recipe

Ingredients
  • 1 1/4 c Packed brown sugar
  • 2 c Fresh or frozen cranberries
  • 1 c Buttermilk
  • 1 c White chocolate chips
  • 3/4 c Butter
  • 2 Eggs
  • 1 ts Baking soda
  • Pinch of salt
  • 1 ts Baking powder
  • 2 1/2 c All-purpose flour

Directions
  • Step #1 If using frozen cranberries, thaw & drain berries.
  • Step #2 In large bowl, beat butter with 1 c of the brown sugar until light.
  • Step #3 Beat in eggs, 1 at a time, beating well after each addition.
  • Step #4 In separate bowl, baking soda, mix together flour, baking powder and salt.
  • Step #5 Add to butter mixture alternately with buttermilk, making 3 additions of flour mixture & 2 of buttermilk.
  • Step #6 carefully stir in the cranberries & 3/4 c of the white chocolate chips.
  • Step #7 Spoon into greased 9 inch springform pan, smoothing top.
  • Step #8 Sprinkle top with remaining brown sugar & chocolate chips.
  • Step #9 Bake coffee cake in centre of 350F oven for about 1 hr & 15 mins or until firm when carefully pressed in centre.
  • Step #10 Let cool in pan on rack for 20 mins before removing from pan.
  • Step #11 Serve warm or cool.
  • Step #12 (Coffee cake can be wrapped in plastic wrap, then foil & frozen in airtight container for up to 2 weeks.
