Cranberry-cider Granita Recipe

Ingredients
  • 1/2 c Dried cranberries
  • 3/4 ts Dry mustard
  • 1/3 c Coarsely sliced pecans for garnish
  • 2 tb Butter
  • 1 ts Ground cinnamon
  • 1/4 c Orange juice
  • 1 ts Salt
  • 1 lb Peeled carrots
  • Cut into 2 1/2- by 1/2-inch sticks
  • 1 tb Brown sugar

Directions
  • Step #1 6 SERVINGS LACTO Dried cranberries, available in most supermarkets, add a festive note to these simple glazed carrots.
  • Step #2 PLACE CARROTS & 1/2 tsp salt in a large saucepan.
  • Step #3 Cover with water & bring to a boil.
  • Step #4 Reduce heat; cook 10 mins or until carrots are tender.
  • Step #5 Drain.
  • Step #6 mix brown sugar, cinnamon, mustard & remaining salt in small mixing bowl.
  • Step #7 Add orange juice.
  • Step #8 Melt butter in large skillet.
  • Step #9 Add carrots & orange juice mixture.
  • Step #10 Cook 2 to 3 mins or until carrots are coated, stirring frequently.
  • Step #11 Add cranberries; cook this until heated through.
  • Step #12 Garnish with pecans.
