Cranberry-walnut Scones Recipe

Ingredients
  • 1 lb Fresh or frozen cranberries
  • 1/2 c Granulated sugar
  • Divided into segments
  • 1/4 c Maple syrup
  • 4 Naval oranges; peeled, and
  • 1/4 c Loosely-packed dark brown sugar
  • 1 tb Ground cinnamon
  • 1 ts Freshly-grated nutmeg
  • 3/4 c Water
  • 1/2 c Coarsely-sliced walnut pieces

Directions
  • Step #1 Bring the sugars, cinnamon, syrup, water, & nutmeg to a boil.
  • Step #2 Reduce to a simmer & cook carefully 5 mins.
  • Step #3 Add the cranberries and continue to simmer, uncovered, until half the berries "pop".
  • Step #4 Remove from the heat & stir in the the orange segments.
  • Step #5 Cool, stir in the the walnut pieces, & serve.
  • Step #6 This recipe yields 5 c of relish.
