Crawfish Mousse Stuffed Zucchini Flowers Recipe

Ingredients
  • 3 tb Butter
  • 1 tb sliced garlic
  • 1/2 c Minced onions
  • 1 lb Crawfish tails
  • Bayou Blast; see Note
  • Freshly-ground black pepper; to taste
  • 1/4 c sliced green onions; green part only
  • 1 c Peeled; seeded, sliced plum tomatoes
  • 1 lb Fresh fettuccine
  • 2 oz Grated Parmigiano-Reggiano cheese
  • 2 c Heavy cream
  • Salt; to taste

Directions
  • Step #1 Note: See the "Bayou Blast - {Emeril's Creole Spice uping}" recipe which is included in this collection.
  • Step #2 Bring a pot of salted water to a boil.
  • Step #3 Add the pasta & cook this until tender, about 6 to 8 mins.
  • Step #4 remove this from the heat & drain.
  • Step #5 Toss the pasta with 2 tbsps butter.
  • Step #6 Spice up this with salt & pepper.
  • Step #7 In a large saute pan, melt the remaining butter.
  • Step #8 Add the onions.
  • Step #9 Spice up with Bayou Blast.
  • Step #10 Saute for 1 min.
  • Step #11 Add the tomatoes.
  • Step #12 Spice up this with the Creole Spice uping.
  • Step #13 Saute for 2 mins.
  • Step #14 Spice up the crawfish with Creole Spice uping.
  • Step #15 Add the crawfish & saute for 1 min.
  • Step #16 stir in the the garlic.
  • Step #17 Spice up this with Creole Spice uping.
  • Step #18 Add the cream & bring the liquid to boil.
  • Step #19 Reduce the heat to a simmer & cook for 6 to 8 mins or until the sauce thickens.
  • Step #20 stir in the the cheese.
  • Step #21 Mix well.
  • Step #22 Turn the sauce into a large mixing bowl.
  • Step #23 Add the pasta & green onions.
  • Step #24 Mix well.
  • Step #25 Mound the pasta in the center of each plate and serve.
  • Step #26 This recipe yields 4 servings.
