Crawfish Pie Recipe

Ingredients
  • 1 c Dried fine bread crumbs
  • 1 ts Finely sliced parsley
  • Salt
  • 2 tb Milk
  • 2 ts Brandy
  • 1 c Flour
  • 1 ts Minced onion
  • Oil for frying
  • 2 c Lemon Butter Sauce; warm
  • 1 Egg
  • 10 Zucchini flowers; up to 12
  • Creole Spice uping
  • Freshly ground white pepper
  • 1/2 lb Cream cheese; at room temperature
  • 1/2 lb Louisiana crawfish tails
  • 1/2 ts sliced garlic
  • 1/2 Lemon; juiced
  • 1 ds Crystal Hot Sauce
  • 1/4 c Butter; room temperature

Directions
  • Step #1 In a food processor/blender, add the cream cheese & puree until smooth.
  • Step #2 Add the crawfish & process until the mixture is smooth, about 1 min.
  • Step #3 Scrape down the sides of the bowl.
  • Step #4 Add the garlic, parsley, onion, butter, brandy & lemon juice.
  • Step #5 Process until the mixture is smooth again, another min.
  • Step #6 Spice up this with salt, white pepper & hot sauce.
  • Step #7 Spoon the mixture into the pastry bag.
  • Step #8 Pipe the filling into the center of each flower, pressing the flower firmly into the filling & sealing completely.
  • Step #9 Cover & put in the fridge for 1 hr.
  • Step #10 Place the flour in a shallow bowl & Spice up this with Creole Spice uping.
  • Step #11 Place the egg & milk in a shallow bowl.
  • Step #12 Spice up this with Creole Spice uping & mix well.
  • Step #13 Place the bread crumbs in a shallow bowl & Spice up this with Creole Spice uping.
  • Step #14 Carefully dredge each zucchini flower in the flour.
  • Step #15 Dip each flower in the egg wash, letting the excess drip off.
  • Step #16 Dredge the flowers in the bread crumbs, coating completely.
  • Step #17 Fry the flowers in batches until golden.
  • Step #18 Remove & drain on paper towels.
  • Step #19 Spice up this with Creole Spice uping.
  • Step #20 To serve, spoon the sauce in the center of each plate.
  • Step #21 Place the flowers in the center of the sauce.
  • Step #22 Garnish with parsley.
  • Step #23 Yield: 8 servings.
