Cream Of Broccoli Soup Recipe

Ingredients
  • 3 tb White flour
  • 2 c Vegetable stock
  • 1 ts Dried thyme
  • 2 ts Olive oil
  • 2 Stalks broccoli; cut large chunks
  • Salt & pepper; to taste
  • 4 md Potatoes; coarsely sliced
  • 2 c Soy milk
  • 1 md Onion; coarsely sliced

Directions
  • Step #1 Saute the onion in the olive oil for 2 mins.
  • Step #2 Add the potatoes, stock, & thyme.
  • Step #3 Allow the mixture to simmer until the potatoes are tender, about 20mins.
  • Step #4 mix the soymilk & flour in a mixer.
  • Step #5 Add the broccoli in several additions & process until it is minced.
  • Step #6 Pour the broccoli-soymilk mixture into the potatoes & onions.
  • Step #7 Bring the soup to a boil.
  • Step #8 as soon as possible lower the heat & let simmer for 10mins.
  • Step #9 Add salt & pepper & more thyme to taste.
