Cream Of Broccoli Soup Recipe

Ingredients
  • 2 tb Butter
  • 2 tb sliced fresh parsley
  • 2 Bay leaves
  • 14 1/2 oz Clear chicken broth
  • 3 c Milk
  • 2 tb Lemon juice
  • 1 1/2 lb Broccoli
  • 3 c Whipping cream
  • 1 sm Onion; finely sliced
  • 1/2 ts Pepper
  • 2 tb Freshly grated parmesan
  • 2 md Celery stalks; sliced
  • 2 Garlic cloves; finely sliced
  • 1 ts Ground sage; =or=- freshly grated

Directions
  • Step #1 Cut broccoli flowerets from stems.
  • Step #2 Reserve.
  • Step #3 Chop broccoli stems.
  • Step #4 Heat butter in 4-quart Dutch oven over medium-high heat.
  • Step #5 Saut??garlic and onion in butter.
  • Step #6 stir in the broccoli stems, cream, lemon juice, celery, bay leaves & broth.
  • Step #7 Heat to boiling.
  • Step #8 Boil, uncovered, 15 mins.
  • Step #9 Reduce heat to medium.
  • Step #10 stir in the broccoli flowerets, parsley, milk, sage & pepper.
  • Step #11 Cover & cook 30 mins.
  • Step #12 Remove bay leaves.
  • Step #13 Top each serving with cheese.
