Creamed Rutabaga And Sweet Potato Recipe

Ingredients
  • 1/4 c Shredded sharp cheddar cheese
  • 1/2 ts Salt
  • 3 c Fresh pumpkin; see note, cooked & cubed
  • 4 c Baking potato; 1 1/2 lbs, peeled & cut into 1 1/2" cubes
  • 1/4 c Sour cream; at room temperature
  • 1/8 ts White pepper

Directions
  • Step #1 Place potato in a large saucepan; cover with water, & bring to a boil.
  • Step #2 Cover & cook 30 mins or until tender; drain.
  • Step #3 mix potato, pumpkin, & remaining ingredients; beat at medium speed of a mixer until smooth.
  • Step #4 NOTES : Substitute 2-1/4 c canned unsweetened pumpkin for the fresh, if desired.
