Creamed Spinach Recipe

Ingredients
  • 1 sm Onion; sliced
  • 1 lb Cream cheese
  • 4 lb Fresh spinach
  • 1/2 c Grated Parmesan cheese
  • Salt; to taste
  • 1/2 c Bread crumbs
  • Nutmeg; to taste
  • 1/2 c Sour cream
  • 4 tb Butter
  • Freshly-ground black pepper; to taste

Directions
  • Step #1 preheat your trusty oven to 325F degrees.
  • Step #2 Trim & wash the spinach.
  • Step #3 In a large pot of salted, boiling water add spinach.
  • Step #4 Simmer the spinach, stirring every once in awhile, for 10 mins.
  • Step #5 Then drain, refresh, & squeeze dry.
  • Step #6 Saute the onions in the butter until tender.
  • Step #7 Add the cooked spinach, sour cream, salt, cream cheese, grated Parmesan cheese, pepper and nutmeg to taste.
  • Step #8 Transfer mixture to a buttered baking dish.
  • Step #9 Saute 1/2 c bread crumbs in 2 tbsps of butter until browned.
  • Step #10 Sprinkle top bread crumbs on spinach.
  • Step #11 Put it in the oven & bake for 20 mins, then serve.
  • Step #12 This recipe yields 6 to 8 servings.
