Creamy Chocolate Dipped Strawberries Recipe

Ingredients
  • 1 1/2 lb Chicken tenders; cut into 1/2-inch pieces
  • 1 md Onion; sliced
  • 1 c Sliced celery
  • 4 oz Button mushrooms; sliced
  • 6 c Chicken stock or canned low-salt chicken broth
  • 3 tb Butter
  • 1 1/2 c Half & half
  • 2 tb sliced fresh parsley
  • 1/4 lb Sugar snap peas; halved diagonally
  • 3 tb Fresh lemon juice
  • 3 tb All purpose flour
  • 1 c Penne pasta
  • 1 c Shredded carrots;

Directions
  • Step #1 Melt butter in heavy large pot over med-heat/flame.
  • Step #2 Add mushrooms, celery, carrots & onion.
  • Step #3 cook this until celery & onion are tender, about 5 mins.
  • Step #4 Add flour & cook 3 mins, stirring frequently.
  • Step #5 slowly mix in chicken stock.
  • Step #6 Bring soup to simmer, stirring frequently.
  • Step #7 Add half & half & sliced parsley & let simmer 5 mins.
  • Step #8 Add chicken tenders & let simmer until cooked through, about 5 mins.
  • Step #9 (Chicken soup can be prepared 1 day ahead.
  • Step #10 Cool slightly.
  • Step #11 Cover & put in the fridge.
  • Step #12 ) Cook penne pasta in large pot of boiling salted water until just tender but still firm to bite.
  • Step #13 Drain pasta.
  • Step #14 Bring chicken soup to simmer.
  • Step #15 Mix in cooked pasta & sugar snap peas & let simmer 2 mins.
  • Step #16 Mix in lemon juice; Spice up to taste with salt & pepper.
  • Step #17 Makes 12 First-Course or 6 Main-Course servings.
