Creamy Eggs With Smoked Salmon On Popovers Recipe

Ingredients
  • 3 tb Invert sugar; See Note
  • OR pecans
  • 1/3 c sliced walnuts
  • A dash of salt
  • 1/2 ts Vanilla extract
  • Dipping chocolate
  • 1 c Marshmallow cream
  • 2 tb Light corn syrup
  • 1/2 c Water
  • 3 c Sugar
  • 1/3 c Candied fruit; sliced

Directions
  • Step #1 This is excellent for making Easter eggs but you can also make candy bars by patting candy into a square on waxed paper, cutting into bars & dip in chocolate.
  • Step #2 buy invert sugar at cake & decorating stores.
  • Step #3 In a small saucepan, mix invert sugar, fruit & nuts.
  • Step #4 Stir & boil for 2-3 mins; drain, reserving liquid.
  • Step #5 mix liquid, sugar, corn syrup, salt & water in a 2-quart saucepan.
  • Step #6 Cover tightly & bring to a boil.
  • Step #7 Uncover & place a candy thermometer in pan; cook to 250 degrees.
  • Step #8 Pour candy out on a marble slab & cool to lukewarm.
  • Step #9 Work candy with spatula until it is opaque.
  • Step #10 Add vanilla andmarshmallow creme.
  • Step #11 Continue to paddle candy until creamy.
  • Step #12 Add prepared fuit & nuts; knead into candy.
  • Step #13 Form into eggshapes & let this stand a couple of hrs.
  • Step #14 Dip in chocolate.
  • Step #15 Makes 16 medium-size eggs.
