Creamy Pasta Primavera Recipe

Ingredients
  • 3/4 c Grated Parmigiano-Reggiano; up to 1
  • 3 c Water
  • 3/4 c Instant polenta
  • 1 tb Unsalted butter

Directions
  • Step #1 Bring water to a boil in a 2-quart saucepan & slowly add polenta, whisking constantly.
  • Step #2 Cook polenta over moderate heat, whisking constantly, 5 mins.
  • Step #3 remove this from heat & whisk in cheese, butter, & salt & pepper to taste.
  • Step #4 Serve as soon as possible.
  • Step #5 Makes 4 servings.
