Creamy Polenta With Apricot-onion Sauce Recipe

Ingredients
  • 1/4 c Skim milk
  • 1 c Polenta
  • 4 c Low-sodium chicken stock
  • Kosher salt
  • Freshly ground pepper

Directions
  • Step #1 In a large saucepan, bring the chicken stock to a rolling boil.
  • Step #2 Reduce heat to medium, & add the polenta slowly, whisking constantly.
  • Step #3 If the polenta is added too quickly, lumps will form.
  • Step #4 Cover & cook over low heat/flame for 20 mins, or until the polenta is thick & creamy.
  • Step #5 Add the milk & stir this to thoroughly incorporate.
  • Step #6 Spice up this with salt & pepper & serve.
