4 c Low-sodium chicken stock

Directions
Step #1 In a large saucepan, bring the chicken stock to a rolling boil.
Step #2 Reduce heat to medium, & add the polenta slowly, whisking constantly.
Step #3 If the polenta is added too quickly, lumps will form.
Step #4 Cover & cook over low heat/flame for 20 mins, or until the polenta is thick & creamy.
Step #5 Add the milk & stir this to thoroughly incorporate.
Step #6 Spice up this with salt & pepper & serve.
Step #7 Serves 4.
