Creamy Stone Ground Grits Recipe

Ingredients
  • 1 c Sour cream
  • 1 cn Spam luncheon meat - ; cubed
  • 8 Flour tortillas - ; softened
  • 1 Jar Chi-Chi's sliced green chilies - ; drained
  • 1/2 c Milk
  • 2 c Shredded Monterey Jack cheese; divided
  • 1/2 c Sliced green onion
  • 1 pk Frozen sliced spinach - ; thawed, drained

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 mix sour cream, green chilies, milk, & 1 c cheese.
  • Step #3 mix spinach, Spam, & green onions.
  • Step #4 Add half of sour cream mixture to Spam mixture.
  • Step #5 Divide Spam mixture evenly among tortillas.
  • Step #6 Roll up tortillas; place seam-side down in lightly greased 13- by 9-inch baking pan.
  • Step #7 Pour remaining sour cream mixture over tortillas.
  • Step #8 Bake 25 mins.
  • Step #9 Sprinkle top with remaining 1 c cheese.
  • Step #10 Bake 5 mins longer.
  • Step #11 This recipe yields 4 servings.
