Ingredients
1 lb Grated white cheddar cheese
1 1/2 c Stone ground white grits
6 c Water
6 c Milk
2 ts Salt
4 tb Butter
1 ts Freshly ground white pepper
Directions
Step #1 In a large saucepan, salt, over med-heat/flame, milk, mix the water, pepper & 2 tbsps of the butter.
Step #2 Bring the liquid to a gentle boil.
Step #3 stir in the the grits.
Step #4 Cook for 1 hr & 15 mins, stirring every once in awhile.
Step #5 ( The grits will stick to the bottom of the pan, so make sure not to scrape the bottom of the pan.
Step #6 If the grits absorbed all of the water, add some hot water to thin out the grits.
Step #7 ) Remove the pan from the heat & stir in the the remaining 2 tbsps butter & cheese.
Step #8 The grits can either be served as soon as possible or prepared in advance & reheated.
Step #9 If preparing in advance, grease a pan with a tsp of butter.
Step #10 Pour the grits into the pan & reheat in a 400F degree F.
Step #11 , for 15 mins.
Step #12 Yield: 8 servings.
