Creamy Tomato Soup Recipe

Ingredients
  • 1/2 c Dry white wine
  • 2 tb Olive oil
  • 28 oz Italian peeled tomatoes - ; sliced & drained
  • 1 1/2 c Minced red onions
  • Salt; to taste
  • 3/4 c Rich shellfish stock
  • 1/2 c Heavy cream
  • Freshly-ground black pepper; to taste
  • 1 ts Minced rosemary

Directions
  • Step #1 Add olive oil & onions to a saucepan & saute until just beginning to color.
  • Step #2 Add wine, stock, tomatoes & rosemary & cook over moderately-high heat for 5 to 6 mins to reduce slightly.
  • Step #3 Strain sauce to remove tomato seeds.
  • Step #4 Return to pan, add cream & reduce a couple of mins more to a light sauce consistency.
  • Step #5 Correct Spice uping with salt & pepper.
