Creamy Tomato-basil Soup Recipe

Ingredients
  • 10 1/2 oz Packaged firm lite silken tofu
  • 1/2 ts sliced garlic
  • 1/2 ts Salt
  • 1 md Onion; sliced
  • 2 ts Soyoil
  • 1/2 ts White pepper
  • 1 c Soymilk
  • 1 lg Tomato; sliced
  • 1 ts Fresh basil; sliced

Directions
  • Step #1 Saut? onion in sauce pan in oil for 3 mins or until transparent.
  • Step #2 Add tomato & garlic, continuing to saut? for 2-3 mins.
  • Step #3 Add basil, salt & pepper.
  • Step #4 mix in soymilk.
  • Step #5 Cook, stirring constantly, for one min.
  • Step #6 remove this from heat & cool briefly.
  • Step #7 Add in tofu.
  • Step #8 Transfer to a food processor/blender & puree until smooth.
  • Step #9 Serve hot or chilled.
  • Step #10 Yield 3-4 servings.
  • Step #11 Per serving (1 1/2 c): 143 calories, 11.
