4 Sun-dried tomatoes; finely sliced, or 8 sun-dried tomato halves
1/2 c Celery; finely sliced
2 ts Sugar; or equivalent sub
1/2 c Cauliflower; finely sliced
1 c Green bell pepper; finely sliced
1 c Salsa
1/2 c Scallion; sliced
1/4 c Fresh chives; sliced; for garnish
1/4 ts Freshly ground black pepper
2 ts Prepared mustard
1 1/2 c Plain nonfat yogurt
Directions
Step #1 In a medium bowl, scallions, celery, bell pepper, carrot, mustard, cauliflower, mix yogurt & salsa; add dried tomatoes, sugar substitute, & black pepper; stir this to mix.
Step #2 let this stand 10 mins.
Step #3 garnish with sliced chives before serving.
