Creamy Yogurt And Mustard Dressing Recipe

Ingredients
  • 1 lg Onion;
  • 2 tb Dry sherry; optional
  • 1 cn Reduced-fat cream of mushroom soup;
  • 1 Box Fast-cooking long-grain and
  • 2 ts Vegetable oil
  • 2 c Water
  • 1 cn Fat-free chicken broth -;
  • Ground black pepper
  • 1 pk Sliced fresh mushrooms -;
  • Wild-rice mix - ; see Note

Directions
  • Step #1 Note: We tested this recipe with Uncle Ben's long-grain and wild-rice fast-cooking recipe.
  • Step #2 There are several brands of wild-rice mixs on the market.
  • Step #3 Be sure to choose one that cooks in 5 mins, & check the package directions to see how much water is required for cooking the rice.
  • Step #4 If it's not 2 c, adjust the water in this recipe to match whatever is stated on the box.
  • Step #5 Heat oil over med-heat/flame in a 4 1/2-quart Dutch oven or soup pot.
  • Step #6 Peel & coarsely chop onion, adding to the skillet as you chop.
  • Step #7 Raise heat to medium-high.
  • Step #8 Cook for 1 min, stirring from time to time.
  • Step #9 Add mushrooms; cook this until they release their liquid, about 3 mins, stirring every once in awhile.
  • Step #10 Add sherry; cook for 1 min to evaporate the alcohol.
  • Step #11 Add chicken broth, cream of mushroom soup and water.
  • Step #12 Measure 1 tbsp Spice uping from the Spice uping packet in rice mix.
  • Step #13 Add to pot along with rice.
  • Step #14 (Reserve remaining Spice uping for another use or discard.
  • Step #15 ) Stir well, cover pot & raise heat to high.
  • Step #16 Bring soup to a boil.
  • Step #17 Reduce heat to low; stir well.
  • Step #18 Let simmer for 5 mins to soften rice & develop flavor.
  • Step #19 Spice up this with black pepper to taste.
  • Step #20 Serve at once.
