Step #1 1 Preheat the oven (gas mark 4 / 350F / 180C).
Step #2 2 Beat the eggs & white sugar with a fork in a bowl until the mixture whitens.
Step #3 Add the cream & vanilla essence, beat thoroughly to mix the ingredients well.
Step #4 3 Pour the mixture into ovenproof ramekin dishes & put them in a bain-marie in the oven for 1 hr.
Step #5 remove this from the oven & allow to cool before putting them into the refrigerator.
Step #6 4 Just before serving, pour the brown sugar over the top & put the ramekins under the grill for 5 mins so that the sugar forms a caramelised crust.
