Ingredients
  • 1/4 ts Freshly-ground black pepper
  • 2 c Chicken stock; homemade
  • 2 tb Finely-sliced parsley; for garnish
  • 1/2 ts Salt
  • 1 lg Egg yolk; lightly beaten
  • 3/4 c Plain yogurt; for garnish
  • 1 cn Hearts of palm - ; drained, with
  • All of the liquid reserved

Directions
  • Step #1 Cut the hearts of palm into 3/4-inch rounds & quickly saute in butter.
  • Step #2 Add reserved liquid & chicken stock.
  • Step #3 Cook over med-heat/flame stirring for 2 to 3 mins.
  • Step #4 Transfer to a mixer & puree.
  • Step #5 Strain through a sieve & return to a sauce pan.
  • Step #6 Temper 1 egg yolk with some of the hot liquid & whisk into the puree.
  • Step #7 Spice up this with salt and pepper.
  • Step #8 Ladle into warm soup bowls.
  • Step #9 mix the parsley & yogurt & place a dollop on top of the soup as a garnish.
  • Step #10 This recipe yields 6 servings.
