Creole Christmas Fruitcake Recipe

Ingredients
  • 2 md Potatoes
  • 6 tb sliced fresh flat-leaf parsley
  • 1/2 ts Ground cumin
  • 4 Scallions
  • 3 tb sliced fresh cilantro
  • OR 1/2 green bell pepper; sliced
  • 1 md Red bell pepper; sliced
  • 2 c Vegetable broth
  • Trimmed & finely sliced
  • 1 sm Onion; finely sliced
  • 1/2 ts Dried oregano
  • Salt & ground black pepper; to taste
  • 6 Rocotillo chile peppers; seeded & sliced
  • Peeled & cut into 1-inch pieces
  • 2 md Tomatoes; seeded & sliced
  • 3 tb Tomato paste
  • 1 1/2 tb Olive oil
  • 3 Cloves garlic; minced
  • 30 oz Canned chickpeas; rinsed and drained

Directions

  • Step #2 This mixture is called sofrito, the very soul of Spanish-Caribbean cooking & the starting point not only for this chickpea stew but for many Hispanic dishes.
  • Step #3 In large nonstick skillet, heat oil over med-heat/flame.
  • Step #4 Add onion, chile peppers, garlic, bell pepper, scallions, cumin & oregano.
  • Step #5 Cook, stirring often, until vegetables are soft but not brown, 5 to 6 mins.
  • Step #6 Add tomatoes, cilantro & 3 tbsps parsley.
  • Step #7 Cook, stirring every once in awhile, until most of the liquid has evaporated and mixture is thick & fragrant, 5 mins.
  • Step #8 stir in the tomato paste; cook 1 min.
  • Step #9 stir in the broth & bring to a boil over high heat.
  • Step #10 stir in the potatoes.
  • Step #11 Reduce heat to medium and simmer 6 mins.
  • Step #12 stir in the chickpeas & let simmer until potatoes are tender & sauce is thick & flavorful, about 6 mins.
  • Step #13 Spice up this with salt & black pepper.
  • Step #14 Garnish with remaining parsley.
