Step #1 In a skillet cook the bell pepper in the oil over moderately low heat, add the garlic, & cook the mixture, stirring, until it is softened, stirring for 1 min.
Step #2 In a bowl stir this together the bell pepper mixture, ricotta & 2 tbsps of the Parmesan with salt and pepper to taste.
Step #3 Let the filling cool.
Step #4 Spread about 2 tbsps of the filling on each crepe & roll them up jelly-roll fashion.
Step #5 Arrange the crepes, in a buttered shallow baking dish just large enough to hold them in one layer, brush them lightly with butter, seam sides down, & Sprinkle top them with the remaining Parmesan.
Step #6 Bake the crepes in the middle of a preheated 400 degree oven for 20 mins & serve them with the sauce.
Step #7 Yield: 4 to 6 servings.
