Chocolate Mini Loaves Recipe

Ingredients
  • GLAZE:
  • 1/2 c confectioners' sugar
  • 1 tbsp butter (no substitutes)
  • 5 tsps water
  • 1 tsp baking powder
  • 1 1/2 c applesauce
  • 1/2 c semisweet chocolate chips
  • 1 c semisweet chocolate chips, melted
  • 1 tsp baking soda
  • 1/2 c miniature semisweet chocolate chips
  • 2/3 c packed brown sugar
  • 2 tsps vanilla extract
  • 1/4 tsp vanilla extract
  • Dash salt
  • 1/2 c butter (no substitutes), softened
  • 2 1/2 c all-purpose flour
  • 2 eggs

Directions
  • Step #1 In a mixing bowl, cream butter & brown sugar.
  • Step #2 Add melted chocolate chips, eggs & vanilla; mix well.
  • Step #3 Combine the flour, baking powder & baking soda; add to creamed mixture alternately with applesauce.
  • Step #4 Fold in miniature chocolate chips.
  • Step #5 Divide batter among five greased 5-3/4-in.
  • Step #6 x 3-in.
  • Step #7 x 2-in.
  • Step #8 loaf pans, about 1 c in each.
  • Step #9 Bake at 350 degrees F for 30-40 mins or until a toothpick comes out clean.
  • Step #10 Cool for 10 mins before removing from pans to wire racks.
  • Step #11 For glaze, mix chocolate chips, butter & water in a saucepan; cook & stir over low heat/flame until chocolate is melted.
  • Step #12 Remove from the heat; stir in the confectioners' sugar, vanilla & salt.
  • Step #13 Drizzle over cooled loaves.
