Crisp Onions Recipe

Ingredients
  • 6 oz Rice vermicelli
  • 1 tb Mint; sliced
  • 6 oz Raw prawns; shelled
  • Half a lemon; juice of
  • 2 tb Soya sauce
  • 2 tb Fresh coriander; sliced
  • Vegetable oil; for deep-frying
  • 4 Spring onions; finely sliced
  • Grated rind of 1 lemon
  • 4 Cloves garlic; finely sliced
  • 1 tb Rice vinegar
  • 1 Skinned & boned chicken breast; cut into strips

Directions
  • Step #1 Heat about 2" of oil in a wok or deep frying pan.
  • Step #2 Break the vermicelli into pieces & cook them in small batches for about 30 seconds, then turn over, repeat & cook this until golden.
  • Step #3 Remove, drain on kitchen paper & keep warm.
  • Step #4 Once you have cooked all the vermicelli, discard most of the oil, leaving a couple of tbsps.
  • Step #5 Fry the spring onion, garlic & chilli until softened, then add the chicken & cook for five mins, turning frequently until lightly browned.
  • Step #6 Add the prawn & stir-fry for a further min.
  • Step #7 add the remaining ingredients & stir this to mix, cook for 30 seconds then return the vermicelli to the pan.
  • Step #8 Distribute the mixture evenly, check Spice uping & serve as soon as possible.
  • Step #9 Suggested Wine: Crisp, tart Sauvignon Blanc.
