Crispy Mackerel, Chilli And Herb Sauce Recipe

Ingredients
  • 1 lb Ground lamb
  • 18 Round wanton wrappers
  • 2 Cloves garlic; sliced
  • 2 ts sliced gingerroot
  • 2 Green onions; minced
  • 1/2 ts Asian chile sauce; plus extra for dipping
  • 2 tb Hoisin sauce
  • Soy sauce to taste
  • 4 c Plus 1 tsp vegetable oil

Directions
  • Step #1 In a medium saute pan, heat 1 tsp oil until very hot.
  • Step #2 Add garlic & gingerroot & saute until you can smell the aroma.
  • Step #3 Add lamb and cook this until it is cooked through.
  • Step #4 Add hoisin sauce & chile sauce and mix.
  • Step #5 remove this from heat & allow this to cool.
  • Step #6 Mix in onions & Spice up with soy sauce.
  • Step #7 To assemble, place 1 tbsp of lamb mixture in the middle of a wanton wrapper.
  • Step #8 Brush a bit of water around the edge & fold over to form a half-circle.
  • Step #9 Crimp the edge & set aside.
  • Step #10 Continue the process until all the wrappers have been filled.
  • Step #11 Heat 4 c oil in a medium-size saucepan until very hot.
  • Step #12 Place as many dumplings in the pan as will fit & cook on both sides until golden brown, about 2 to 3 mins.
  • Step #13 Drain on paper towels while you cook the rest of the dumplings.
  • Step #14 Serve warm with a bit of the chile sauce for dipping.
