Cristina's Tiramisu Recipe

Ingredients
  • 16 oz Dijon mustard
  • 20 lb Turkey
  • 6 Lemons; juice of
  • 1/2 c Low sodium soy sauce
  • 1 c Olive oil
  • 1 Handfuls fresh rosemary; basil, thyme, oregano, sage
  • Salt & pepper

Directions
  • Step #1 ---GRAVY------ 3 c Chicken stock 1 ts Arrow root 1/4 c Sherry 1/2 c sliced chives Directions: Turkey: mix the mustard, soy sauce, lemon juice & olive oil.
  • Step #2 Spice up the bird with salt & pepper & place this in large roasting pan.
  • Step #3 Pour marinade over turkey.
  • Step #4 Stuff lemon rinds & herbs in cavity of bird & remaining herbs on top.
  • Step #5 Cover with foil & place this in 400 degree oven for 1 1/2 hrs.
  • Step #6 Remove cover & place thermometer into deepest point in bird.
  • Step #7 Place turkey back in oven, uncovered, and baste every 15 mins cook for approximately 2 1/2 - 3 hrs more until thermometer reads poultry.
  • Step #8 Gravy: Place pan with drippings on top of stove over high heat.
  • Step #9 Skim fat from pan & bring to simmer.
  • Step #10 Add 3 c chicken stock.
  • Step #11 Remove 1/2 c of liquid & mix with 1 tsp of arrowroot.
  • Step #12 Add to stock to thicken.
  • Step #13 You may need to repeat this process 2 to 3 times to reach desired consistency.
  • Step #14 Finish gravy, by removing from heat and adding sherry & chives.
  • Step #15 serve this with turkey.
