Crown Roast Recipe

Ingredients
  • 1 tb Cumin seeds; toasted
  • 6 1/2 lb Crown roast of pork; to 7 lbs
  • 1 ts Freshly-ground black peppercorns
  • 1 tb Fennel seeds; toasted
  • 2 tb All-purpose flour
  • 6 Whole Allspice berries
  • 4 Garlic cloves; pressed
  • 1 Onion; finely sliced
  • Cornbread Hominy Stuffing; see Note
  • 2 tb Vegetable oil
  • 2 Dried Ancho chilies; toasted
  • 1 ts Dried thyme
  • 5 c Chicken stock
  • 1 tb Honey
  • 1 tb Coarse salt

Directions
  • Step #1 Note: See the "Cornbread-Hominy Stuffing" recipe which is included in this collection.
  • Step #2 Crush fennel seeds, allspice, garlic, cumin seeds, salt, thyme and peppercorns in mortar & pestle.
  • Step #3 Fold double thick layer of foil into 4 inch square.
  • Step #4 Poke 4 small holes in foil.
  • Step #5 Push foil through roast to bottom to cover opening so stuffing will not fall out later (holes let steam escape).
  • Step #6 Place roast on rack in large roasting pan.
  • Step #7 Rub spice mixture over meat.
  • Step #8 Cover & put in the fridge overnight.
  • Step #9 Preheat oven to 450 degrees.
  • Step #10 Place pork in oven & reduce oven temperature to 325F degrees.
  • Step #11 Roast pork 1 hr 30 mins.
  • Step #12 Fill cavity with enough Cornbread Hominy Stuffing to mound in center.
  • Step #13 Continue roasting until thermometer inserted into center of meat registers 160 degrees, about 1 hr 20 mins.
  • Step #14 Meanwhile, boil chicken stock until reduced by half.
  • Step #15 remove this from heat.
  • Step #16 Add chilies.
  • Step #17 Cover & let this stand until chilies are softened.
  • Step #18 Puree mixture in processor.
  • Step #19 Carefully transfer pork to platter.
  • Step #20 Add oil to roasting pan & set over med-heat/flame.
  • Step #21 Add onions & stir until onion is tender.
  • Step #22 Add flour & stir until golden brown.
  • Step #23 slowly add stock, whisk until mixed.
  • Step #24 Boil until thickened to gravy consistency.
  • Step #25 stir in the honey.
  • Step #26 Spice up to taste with salt & pepper.
  • Step #27 This recipe yields 8 servings.
