Crown Roast Of Pork With Cognac Cherry Glaze Recipe

Ingredients
  • Salt & pepper
  • 1/2 c Dark molasses
  • Dried thyme
  • 1 Crown roast of pork;
  • 1/2 c Soy sauce

Directions
  • Step #1 Rub pork inside & out with thyme, salt & pepper, to taste.
  • Step #2 Place roast on rack in large roasting pan.
  • Step #3 Mix molasses & soy sauce in small bowl.
  • Step #4 Brush some over roast.
  • Step #5 Roast in 350 degree oven for about 2 & a half to 3 hrs or until done.
  • Step #6 Meat thermometer should read 170 degrees when fully cooked.
  • Step #7 A good rule of thumb is to roast about 20 to 25 mins per lb.
  • Step #8 Baste with molasses mixture during roasting.
  • Step #9 To prevent bone tips from burning, wrap them in foil.
  • Step #10 Serve with chutney (see previous recipe).
  • Step #11 Yield: 6 servings.
