Artichokes W/ Smashed Potatoes And Caramelized Garlic Recipe

Ingredients
  • 1/2 c Olive oil; salt
  • 12 Artichokes; medium
  • 2 Lemons; juice & rind
  • Ground black pepper

Directions
  • Step #1 The description "Truffle style" means they are cooked as truffles would be (sliced paper thin & quickly fried with a little oil, salt & pepper).
  • Step #2 Prepare artichokes as directed in "Cleaning artichokes - Jewish Style".
  • Step #3 Cut in half lengthwise & keep in lemon water.
  • Step #4 "Heat 1/4 c of oil in a large skillet.
  • Step #5 Drain 6 artichokes very well.
  • Step #6 Cut into very thin slivers directly into the hot oil & fry, stirring frequently, for 10 mins.
  • Step #7 Add salt & pepper to taste & continue to fry until slices are golden brown & crisp.
  • Step #8 Transfer to a hot serving dish & keep warm.
  • Step #9 Repeat with the remaining oil and artichokes.
