Artichokes With Potatoes, Greek Style Recipe

Ingredients
  • 2 tb Lemon juice
  • 1 ts Black peppercorns
  • 1/2 ts Dry mustard
  • 1/2 c Drained tofu
  • 2 ts Extra-virgin olive oil
  • 3 tb Distilled white vinegar
  • Salt & pepper to taste
  • 4 Artichokes

Directions
  • Step #1 1.
  • Step #2 Fill a 6-8 quart pan halfway with water.
  • Step #3 Add vinegar and peppercorns, bring to a boil over high heat.

  • Step #5 Meanwhile, slice about 1 inch off tops of artichokes, discard tips.
