Directions
Step #1 preheat your trusty oven to 400F.
Step #2 In a medium heavy skillet cook prosciutto & onion in oil over moderate heat, stirring, until onion is softened.
Step #3 Remove skillet from heat & stir in the arugula & salt & pepper to taste.
Step #4 Arrange flour tortillas on 2 baking sheets & top this with arugula mixture & Parmesan.
Step #5 Bake pizzas on upper & lower racks of oven, until edges are golden, switching positions of baking sheets halfway through baking, about 10 mins.
Step #6 Serves 4 as an entree or 8 to 10 as an hors d'oeuvre.
