Arugula And Roasted Red Pepper Salad Recipe

Ingredients
  • 1/4 c Olive oil
  • A; piece of prosciutto, cut into 1/4-inch dice
  • Four; flour tortillas
  • 1 md Red onion; sliced fine
  • 2/3 c Freshly grated Parmesan cheese;
  • 2 Bunches; arugula, coarse stems discarded and the rest washed well, spun dry, and sliced

Directions
  • Step #1 preheat your trusty oven to 400F.
  • Step #2 In a medium heavy skillet cook prosciutto & onion in oil over moderate heat, stirring, until onion is softened.
  • Step #3 Remove skillet from heat & stir in the arugula & salt & pepper to taste.
  • Step #4 Arrange flour tortillas on 2 baking sheets & top this with arugula mixture & Parmesan.
  • Step #5 Bake pizzas on upper & lower racks of oven, until edges are golden, switching positions of baking sheets halfway through baking, about 10 mins.
  • Step #6 Serves 4 as an entree or 8 to 10 as an hors d'oeuvre.
