Arugula Salad With Oranges Recipe

Ingredients
  • 2 bn Arugula
  • Freshly grated Parmesan cheese to taste
  • 1/4 c Extra virgin olive oil
  • Balsamic Vinegar;
  • Salt & freshly ground black pepper to taste
  • 1 c Peeled garlic cloves

Directions
  • Step #1 FOR THE GARLIC CLOVES: Remove the ends & any blemished spots from the garlic cloves and place them in a small non-reactive saucepan with balsamic vinegar to cover.
  • Step #2 Bring the vinegar to a boil.
  • Step #3 Then lower the heat & let simmer, stirring every once in awhile until the vinegar becomes syrupy & the garlic cloves soften.
  • Step #4 remove this from heat, cool & pour this into a glass canning jar or heat resistant container.
  • Step #5 Use as desired in the salad below or in any salad.
  • Step #6 FOR THE SALAD: Wash the greens & remove any tough stems & discolored spots.
  • Step #7 Place them in a salad bowl with 3 tbsps of the garlic cloves.
  • Step #8 Sprinkle top the grated cheese on the top, drizzle with the balsamic vinegar & olive oil & Spice up this with salt & pepper to taste.
  • Step #9 Serve.
