Asian Beef Salad Recipe

Ingredients
  • 4 Moo Shu pancakes;
  • 1/4 c Honey
  • 3 oz Grated ginger root
  • 2 tb Sesame oil
  • Cilantro sprigs; for garnish
  • 1 ts Chinese five spice powder
  • 1 Star anise
  • 1 Peking duck;
  • Hoisin sauce
  • 2 bn Scallions; cleaned & cut into 2-inch strips
  • 1 tb Peanut oil
  • 1 lg Cucumber; peeled & cut into 2-inch strips
  • 8 oz Soy sauce
  • 1 qt Boiled water

Directions
  • Step #1 In a large pot, bring the water to a boil.
  • Step #2 Place the duck in boiling water & let simmer for 5 mins.
  • Step #3 Let cool & dry.
  • Step #4 While the duck is cooling, in a saucepan, add peanut oil.
  • Step #5 Heat.
  • Step #6 Add ginger, star anise, Chinese five spice powder, soy sauce & honey.
  • Step #7 Add sesame oil.
  • Step #8 Bring mixture to a boil.
  • Step #9 Cover duck with marinade & place this in the refrigerator overnight.
  • Step #10 The next day: preheat your trusty oven to 350 degrees.
  • Step #11 Drain & pat duck dry.
  • Step #12 In a roasting pan with rack & 1/2 c of water.
  • Step #13 Roast 2 hrs.
  • Step #14 Let cool then, remove the meat from the carcass & save the skin.
  • Step #15 Cut the duck into strips, & then assemble the pancake.
  • Step #16 In a warm oven or grill, heat the pancake.
  • Step #17 Spread 1/2 tbsp hoisin sauce over each pancake.
  • Step #18 Place 2 to 3 oz of duck, 2 cucumber strips & 2 scallion strips in front of the pancake.
  • Step #19 Then roll it like sushi into a tube shape.
  • Step #20 Cut off the end, then cut the remaining pieces into 1-inch rounds.
  • Step #21 Arrange on a serving tray and garnish with the crisp skin & fresh cilantro.
  • Step #22 Yield: 4 servings.
