Asian Chicken Quesadilla With Grilled Pineapple Salsa Pt Recipe

Ingredients
  • 1/2 c Low-sodium soy sauce
  • 1 Scallion; coarsely sliced
  • 1/4 c White cheddar; grated
  • ingredients needed for hoisin vinaigrette
  • 1/2 Ripe pineapple; peeled, cored, and cut into 1-inch slices
  • Salt & fresh ground white pepper
  • 3 tb Fresh lime juice
  • 1/4 c Monterey jack; grated
  • 1/4 md Red onion; finely sliced
  • 2 tb Hoisin sauce
  • ingredients needed
  • 1 tb Olive oil
  • 2 tb Ginger; sliced
  • 2 Cloves garlic; finely sliced
  • ingredients needed for grilled pineapple salsa
  • 2 Chicken breasts; boneless and skinless
  • 1/2 Jalapeno; seeded & sliced fine
  • 2 Cloves garlic; coarsely sliced
  • 1/2 c Olive oil
  • 1 1/2 tb Cilantro; coarsely sliced
  • 2 tb Olive oil
  • 2 tb Red onion; finely sliced
  • 1 tb Sesame oil
  • 3 tb Rice wine vinegar
  • Salt & fresh ground white pepper

Directions
  • Step #1 How to Prepare the Quesadilla: 1.
  • Step #2 Place the soy sauce, ginger, & garlic in a saucepan & bring to a boil.
  • Step #3 remove this from the heat & let sit for half an hr.

  • Step #5 Place the chicken breasts in a shallow baking dish & pour the marinade over.
  • Step #6 Cover & place this in the refrigerator to marinate at least 4 hrs or overnight.

  • Step #8 Spice up the chicken with salt & pepper to taste.
  • Step #9 Heat the oil in a large saut? pan over high heat until it just begins to smoke.

  • Step #11 Place the chicken in the pan & saut? 5 mins or until golden brown on one side.

  • Step #13 Lower the heat to medium, turn the chicken over & continue cooking until the chicken is almost cooked through, approximately 4 mins.

  • Step #15 Let the chicken sit for 1 min & slice on the bias into 1/2-inch pieces (the chicken will finish cooking in the oven).

  • Step #17 Preheat the oven to 450 F.
  • Step #18 Place 2 tortillas on an ungreased baking sheet.

  • Step #20 Spread 1/2 the cheeses, green onion, & sliced chicken on the 2 tortillas.

  • Step #24 Bake for 8-12 mins, or until the tortillas are crisp & the cheese has melted.

  • Step #28 Heat a grill on high until it just begins to smoke.
  • Step #29 Grill the pineapple slices 2-3 mins on each side until lightly browned.

  • Step #33 Add the cilantro, lime, onion, jalapeno, & olive oil.
