Asian Papaya-shrimp Salad Recipe

Ingredients
  • 3 tb Oriental sesame oil
  • 1 pk Fresh oriental-style water noodles or; linguine
  • 3 tb Canned chicken broth;
  • 2 1/2 tb Minced peeled fresh ginger
  • 1 tb Creamy peanut butter
  • 1 tb Soy sauce
  • 1 sm Jalapeno chili; seeded
  • 1 tb Rice vinegar
  • 1 c Fresh cilantro leaves;

Directions
  • Step #1 Cook noodles in large pot of boiling salted water until just tender but still firm to bite.
  • Step #2 Drain noodles.
  • Step #3 Rinse with cold water; drain well.
  • Step #4 Transfer to large bowl.
  • Step #5 Toss with 1 tbsp sesame oil.
  • Step #6 With processor running, drop ginger & chili through feed tube and mince.
  • Step #7 Add cilantro, vinegar, peanut butter, soy sauce, 3 tbsps broth & remaining 2 tbsps sesame oil.
  • Step #8 Process until mixture is almost smooth, adding more broth if necessary.
  • Step #9 Spice up to taste with salt & pepper.
  • Step #10 Add sauce to noodles & toss.
  • Step #11 Serves 4.
