Asian Rice Salad Recipe

Ingredients
  • 1 c Crawfish tails
  • Salt; to taste
  • 1/4 c Julienned carrots
  • 2 ts Minced shallots
  • 1 tb Cilantro leaves
  • 1/2 c Shredded Napa cabbage
  • 1 tb Sesame oil
  • 1 ts sliced garlic
  • 24 Wonton wrappers
  • 1 tb sliced peanuts
  • Freshly-ground black pepper; to taste
  • 1 tb Olive oil
  • Chives; long
  • 1 c Ginger Soy Butter Sauce; see Note

Directions
  • Step #1 Note: See the ?Ginger Soy Butter Sauce? recipe which is included in this collection.
  • Step #2 In a saute pan, heat the olive oil.
  • Step #3 When the oil is hot, add the carrots, cabbage & crawfish.
  • Step #4 Spice up this with salt & pepper.
  • Step #5 Saute the mixture for 2 mins.
  • Step #6 Add the shallots & garlic & saute for 1 min.
  • Step #7 remove this from the heat & stir in the the sesame oil, cilantro leaves, & peanuts.
  • Step #8 Spice up this with salt & pepper.
  • Step #9 Bring a pot of salted water to a boil.
  • Step #10 Spoon a tbsp of the filling in the center of each wonton wrapper.
  • Step #11 With water, slightly wet the edges of each wonton.
  • Step #12 Bring one corner of the wrapper to the other, forming a triangle, seal the edges tightly.
  • Step #13 Poach 1/2 of the wontons in the boiling water for 1 to 2 mins, or until the wontons start to float.
  • Step #14 remove this from the water & drain.
  • Step #15 Bring the pot of water back to a boil & poach the remaining wontons.
  • Step #16 In a saute pan, heat 1 tbsp of olive oil.
  • Step #17 When the oil is hot, one at a time, carefully add 1/2 of the wontons, & pan-fry the wontons for 1 min and remove this from the pan.
  • Step #18 Add the remaining oil & continue to pan-fry the remaining wontons.
  • Step #19 To assemble, spoon 1/4 c of the Ginger Soy Butter Sauce in the center of each plate.
  • Step #20 Arrange 6 wontons in the center of the sauce.
  • Step #21 Garnish with long chives.
  • Step #22 This recipe yields 4 appetizer servings.
