4 oz Baked Spice uped Tofu; cut in 1/4" dice, see recipe
1 lb Napa cabbage; shredded
2/3 c Peanut Miso Dressing; see recipe
1/2 c Scallion; thinly sliced
1 c Red bell pepper; sliced
Directions

Step #2 In a large serving bowl or storage container, scallions, bell pepper, mix the cabbage, & tofu.
Step #3 Toss in enough dressing to coat the slaw thoroughly.
Step #4 Serves 4 to 6.
Step #5 NOTE: "Napa cabbage is the ideal choice for this simple slaw, but it's a bit delicate.
Step #6 For optimum taste & texture, spin the rinsed leaves dry before shredding them, & toss in the dressing just before serving.
Step #7 A practical solution is to dress just the amount you'll be needing.
Step #8 For a sturdier slaw that can be put in the fridged for a few days, use green head cabbage, or a mixture of green & red cabbages, instead of napa.
