Creamed Broccoli Soup Recipe

Ingredients
  • 1/2 tsp ground black pepper
  • 1 tbsp soy sauce
  • 4 c water
  • 1/4 c sliced parsley
  • 1 clove garlic, sliced
  • 3 tbsps all-purpose flour
  • 2 c half-and-half
  • 4 large carrots, sliced
  • 1 lb fresh broccoli florets
  • 1 onion, sliced
  • 4 tbsps chicken bouillon powder
  • 1/4 c ice water
  • 3 tbsps butter

Directions
  • Step #1 Melt butter in a saucepan over med-heat/flame; add sliced onions, carrots, & garlic, & cook for 5 mins, stirring every once in awhile until softened.
  • Step #2 In a medium-sized cooking pot, add 4 c water & chicken bouillon granules & bring to boil.
  • Step #3 Add precooked onion mixture to soup pot.
  • Step #4 Add broccoli florets, reserving a few pieces to be added near the end of cooking time.
  • Step #5 Reduce heat & let simmer, covered, for 15 to 20 mins or until broccoli is just tender.
  • Step #6 In a mixer or food processor/blender, puree soup in batches & return to pot.
  • Step #7 Stir in half & half cream & remaining broccoli florets.
  • Step #8 In a c, mix flour with 1/4 c cold water to form a thin liquid.
  • Step #9 Bring soup to boil; add flour mixture slowly, stirring constantly to thicken soup as desired.
  • Step #10 Add soy sauce, black pepper, & stir well.
  • Step #11 Garnish with sliced parsley (or carrot curls) when serving.
  • Step #12 Serve soup hot or cold.
