Ingredients
  • 2 ts Dried oregano, crushed
  • 1/4 c Red wine vinegar
  • 1/4 ts Salt
  • 1/4 ts Pepper
  • 1/3 c Olive oil
  • 1 lb Fresh asparagus
  • 4 To 6 plum tomatoes, sliced
  • 1 tb sliced fresh chives

Directions
  • Step #1 --GARNISH----- sliced fresh chives Snap off tough ends of asparagus.
  • Step #2 Cook in boiling water to cover 2 mins or until crisp-tender; drain.
  • Step #3 Plunge into ice water to stop the cooking process; drain.
  • Step #4 Cover & chill 3 hrs.
  • Step #5 Whisk together olive oil & next 5 ingredients.
  • Step #6 Drizzle over asparagus & tomato slices; garnish with fresh chives, if desired.
  • Step #7 Yield: 4 servings.
