Asparagus Soup With Arborio Rice Recipe

Ingredients
  • 1 Handful fresh spinach
  • 25 g Butter;
  • 6 Shallots
  • Double cream
  • Fresh peas
  • Fresh thyme leaves
  • 2 bn Asparagus
  • Vegetable stock
  • 4 Potatoes

Directions
  • Step #1 Melt the butter & cook the shallots, garlic & soft thyme leaves until soft.
  • Step #2 Add some sliced potatoes & vegetable stock & cook until the potatoes are soft.
  • Step #3 Add the trimmed asparagus, some fresh peas & a handful of spinach & cook for 7 mins.
  • Step #4 Liquidise & pass through a sieve, Spice up to taste.
  • Step #5 Serve topped with a dollop of whipped cream & a few blanched asparagus tips.
