1/4 lb Fresh King crab meat; thawed if frozen, picked over, and drained , about
2 tb Rice vinegar;
Pickled ginger as an accompaniment if desired
1/2 Cucumber; peeled & cut lengthwise into 8- by 1/4-inch strips, discarding the seeds
Soy sauce as an accompaniment
Wasabi; paste to taste for the sushi plus extra as an accompaniment if desired
FOR THE RICE---
1 c White short-grain rice
1/2 ts Salt
Fresh lemon juice for rubbing the avocado
Three; pieces of toasted nori
Directions
Step #1 available at Oriental markets & some specialty foods shops Make the rice: In a large fine sieve rinse the rice under running cold water until the water runs clear with no milky residue & drain it well.
Step #2 In a large heavy saucepan mix the rice with 1 1/4 c water, for 15 mins, covered tightly, & let simmer the rice, bring the water to a boil, or until the water is absorbed & the rice is tender.
Step #3 Remove the pan from the heat, for 10 mins, let the rice stand, covered tightly, & transfer it to a jelly-roll pan, spreading it in an even layer.
Step #4 Keep the rice warm, covered.
Step #5 In a saucepan whisk together the vinegar, the sugar, the Sherry, simmer the mixture until the sugar is dissolved, & the salt, & let it cool.
Step #6 Sprinkle top the rice with as much of the vinegar mixture as necessary to moisten it lightly, tossing it carefully, & cover it with a dampened cloth.
Step #7 (Do not chill the rice.
Step #8 ) The rice may be made 3 hrs in advance and kept, covered with the dampened cloth, at about room temp.
Step #9 Peel & pit the avocado, rubbing it with the lemon juice, & cut it into 1/4-inch-thick strips.
Step #10 Heat the nori in a preheated 350°F.
Step #11 oven for 10 mins, or until it is softened slightly, & keep it warm.
Step #12 Working with one sheet of nori at a time & with a long side facing you, spread about 3/4 c of the rice in an even layer on each sheet, leaving a 1/2-inch border on the long sides.
Step #13 Arrange some of the avocado strips horizontally across the middle of the rice and arrange some of the cucumber strips & the crab meat on top of the avocado.
Step #14 Dab the crab meat with the wasabi & beginning with a long side roll up the nori tightly jelly-roll fashion.
Step #15 Cut each roll with a sharp knife into 3/4-inch-thick slices & serve the rolls with the soy sauce, the extra wasabi, & the ginger.
