Avocado And Roasted Tomatillo Salsa Recipe

Ingredients
  • 1 md Haas avocado; pitted and peeled
  • 1 lb Cheese or meat filled tortellini
  • 3/4 c Heavy cream
  • 2 tb Lemon juice
  • 1 pn Salt & white pepper
  • 3/4 c Parmesan cheese; grated

Directions
  • Step #1 Put the cream in a medium saucepan or skillet over moderate heat.
  • Step #2 Meanwhile, puree the avocado with the parmesan cheese, in a food processor/blender fitted with a metal blade, lemon juice, slat & pepper.
  • Step #3 When the cream is hot but not boiling, stir in the the avocado mixture.
  • Step #4 Continue stirring until the sauce in just heated through, 3-5 mins.
  • Step #5 do not over cook.
  • Step #6 as soon as possible pour over tortellini.
