Avocado Cocktail Recipe

Ingredients
  • 3/4 c Parsley leaves -;
  • 1 1/2 ts Red wine vinegar
  • 2 Ripe Haas avocados; pitted, peeled
  • Peasant bread
  • 2 ts Olive oil
  • Freshly-ground black pepper
  • 5 tb Olive oil; plus
  • 1 tb Fresh lemon juice
  • 1 Clove garlic; peeled
  • 3/4 c Basil leaves -;
  • Salt

Directions
  • Step #1 Place the garlic in a food processor/blender, & pulse.
  • Step #2 Add the parsley, basil, 5 tbsps olive oil, vinegar, & salt & pepper to taste; puree.
  • Step #3 Set the sauce aside.
  • Step #4 Cut the avocados into 1/2 inch chunks.
  • Step #5 Toss with the lemon juice and remaining 2 tsps olive oil.
  • Step #6 Cut eight 1/2-inch-thick slices of bread; toast.
  • Step #7 Spread a scant tbsp of the green sauce on each slice of bread.
  • Step #8 Arrange the avocado chunks on the bread, Sprinkle top with a pinch of ground pepper, & garnish with parsley.
  • Step #9 Serve as soon as possible.
