Avocado Mayonnaise Recipe

Ingredients
  • 3 md Ripe avocados; halved, seeded, & peeled
  • 3 Pink grapefruits; chilled
  • 3/4 c Sour cream
  • 3 tb Honey
  • 1/4 ts Freshly-ground black pepper
  • Juice of 2 large limes
  • Mint leaves; for garnish
  • 1/2 ts Salt

Directions
  • Step #1 Slice ends off grapefruits & stand upright on a counter or tabletop.
  • Step #2 Cut away skin & membrane, exposing fruit.
  • Step #3 Working over a bowl to catch the juice, separate sections by slicing with a serrated knife between membranes.
  • Step #4 Remove & discard the seeds.
  • Step #5 Slice avocado halves lengthwise in 1/2-inch slices.
  • Step #6 Arrange alternating grapefruit sections & avocados slices on 6 salad plates.
  • Step #7 Whisk together sour cream, lime juice, honey, salt, & pepper in a small bowl.
  • Step #8 Just before serving, spoon about 2 tbsps dressing in a stripe over each salad.
  • Step #9 Garnish with mint leaves & serve.
  • Step #10 This recipe yields 6 servings.
  • Step #11 Variations: Toss chunks of avocado & supremes of grapefruit with salt, pepper, & olive oil.
